蟹道 Kanimichi
源起北海道的蟹料理
蟹道品牌的活蟹料理专门店,源起久负盛名的日本北海道传统蟹料理。品牌传递着专注食材的新鲜与精致料理的匠心,善用季节性食材烹饪并遵循本味。始终秉持着研习与探索,不断积累、创造、融合。以传统烹饪技法为魂,打破边界,旨在演绎与日本当地潮流同步的美味蟹料理。作为深圳的首店,蟹道选址地标性建筑——平安金融中心。尝试用精致的料理,来消解城市中心区域繁华喧嚣的生活节奏。
A restaurant specializing in live crab dishes of the Kani Do brand, originated from the prestigious Hokkaido traditional crab dishes in Japan. The brand conveys the ingenuity of fresh and exquisite cuisine focusing on ingredients, making good use of seasonal ingredients and following the original taste. Always uphold research and exploration, and continue to accumulate, create, and merge. With traditional cooking techniques as its soul, breaking boundaries, it aims to interpret delicious crab dishes that are in sync with the local trend in Japan. As the first store in Shenzhen, Xiedao selected the landmark building-Ping An Financial Center. Try to use exquisite cuisine to dissolve the hustle and bustle of life in the center of the city.

舟屋
Funaya
秉承着蟹道品牌的理念与背景,设计的灵感围绕着新鲜、氛围、体验及多样性所展开。在发掘设计元素的过程中,设计师想到了被誉为日本海之京都的伊根湾,由古至今以渔业为生。当地渔民依海而居,在伊根湾潮水落差较小的岸旁,有着独特的建筑形式——舟屋。这一特殊的舟屋形式,也与深圳在发展之初时,小渔村旧貌的建筑印象相呼应。二者皆临近海边,由东方特有木构形式以小比例尺度搭建而成。
Adhering to the concept and background of the Xiedao brand, the design inspiration revolves around freshness, atmosphere, experience and diversity. In the process of discovering the design elements, the designer thought of Ine Bay, known as the Kyoto of the Sea of Japan, which has lived on fisheries since ancient times. Local fishermen live by the sea, and there is a unique architectural form-boat house on the shore of Ine Bay where the tide level is small. This special boat house form also echoes the old architectural impression of the small fishing village in Shenzhen at the beginning of its development. Both are close to the sea and are built with a small scale in a wooden structure unique to the East.




△舟屋形式的店面外观
外观设计上,店面所处位置被流动的购物中心动线所环绕。随着动线走近店面时,好似渔船靠岸缓缓飘荡。基于这种特殊的动态感受,设计师希望外观也具有邻水而建的氛围,进入餐厅之时,如同渔船停靠般由远及近,由流动飘荡到平静舒缓。
In terms of appearance design, the location of the store is surrounded by flowing shopping malls. As the moving line approached the store, it seemed as if a fishing boat was slowly drifting ashore. Based on this special dynamic feeling, the designer hopes that the exterior will also have an atmosphere built next to the water. When entering the restaurant, it will move from far to near like a fishing boat docked, from flowing to calm and soothing.

玄关
Porch
走入店内,通过缓慢的移动感受空间的变化。为了将城市中心区的繁忙与焦虑丢掉,体验安静与轻松的氛围。设计师在入口处设置回归质朴的空间——土玄关。迎面处的染色夯砼墙体,将情绪消解到平静。夯砼作为传统材料具有朴实、安稳的质地,在传统做法的基础上,融入现代建筑体块的结构感,相邻体块之间不规则的错落,留出了一片退让后的光源,与花艺相映成趣,并作为视觉平静的落点。
Walk into the store and feel the changes in space through slow movement. In order to get rid of the busyness and anxiety in the central area of the city, experience the quiet and relaxed atmosphere. At the entrance, the designer set up a space that returns to the simplicity-the rammed earth entrance. The dyed rammed concrete wall on the front side calms the emotions. As a traditional material, rammed concrete has a simple and stable texture. On the basis of traditional methods, it incorporates the structural sense of modern building blocks. They complement each other and serve as a calming point of vision.

障子
Shoji
在阴翳美学中,光线对室内产生影响的元素——障子。设计师尝试在障子的传统边框中植入现代微小的线性灯光,使障子不受传统尺寸的宽度、高度所束缚而均匀透光。在选择障子敷面纸张时,刻意避开了传统纸张的刻板印象,而是采用现代工艺技术的纤维纸来做敷面。透过灯光,纸张内的纤维呈现出一种絮状花纹般的温暖效果。通过连续排列几扇开合的发光障子,视线与动线便合并成向内的通道。
In the shade aesthetics, the element that light affects the interior-shoji. The designer tried to implant modern tiny linear lights in the traditional frame of the shoji, so that the shoji would not be restricted by the width and height of the traditional size, and transmit light evenly. When choosing shoji paper for covering, it deliberately avoided the stereotype of traditional paper, and instead used fiber paper with modern technology to make the covering. Through the light, the fibers in the paper present a warm effect like a flocculent pattern. By successively arranging several open and closed light-emitting barriers, the line of sight and the movement line are merged into an inward channel.

合院
Courtyard
餐厅的核心就餐区,在空间布局层面上,设计师考虑了几种内外交错的空间形式融入其中:有刻意压低屋顶而无墙体或不完全封闭的亭;有拾级而上视线高差变化的堂;还有联排相座的小比例舟屋;或是坡屋檐下半围合形成的檐廊。采取多种建造形式将餐厅核心区围合成内院式的公共中庭。
In the core dining area of the restaurant, in terms of spatial layout, the designer considered several interlaced internal and external spatial forms to integrate into it: there are deliberately lowered roofs without walls or incompletely enclosed pavilions; there are steps with varying heights of sight. There are also small-scale boat houses with row-by-side seats; or a porch half-enclosed under the sloping eaves. Various construction forms are adopted to enclose the core area of the restaurant into an inner courtyard-like public atrium.

△空间功能布局分析图
将东方传统建造的特有空间形式与当下的生活方式作结合,这种内、外、高、低的不同空间变化对人的情绪感知会产生影响,从而产生出一种新的或是多视角变化的就餐体验。在独立就餐区域,设计师强调了日式私密就餐体验的空间分隔性,将相邻座位就餐的互不打扰,含蓄与内敛地融入到每一个独立就餐区位之中。
Combining the unique spatial form of oriental traditional construction with the current life style, the different spatial changes of inside, outside, height, and low will have an impact on people's emotional perception, resulting in a new or multi-perspective change The dining experience. In the independent dining area, the designer emphasizes the spatial separation of the Japanese-style private dining experience, and integrates the dining between adjacent seats into each independent dining area implicitly and restrained.

Engawa縁侧
Engawa Side
在传统日式建筑中,房屋外与屋檐下有一条很特别的木质走廊——縁侧 ,通常也是阳光洒入室内的交界。在设计时,将这个有趣的特征安置在私密包间区的外廊处。并借用传统精巧的竹编形式与现代灯光技术相结合,模拟出传统建筑中光与房屋之间的关联性,同时满足内与外空间设计上的界限模糊化。每当进出包间时,都能够体验到空间层次的多样性变化。
In traditional Japanese architecture, there is a very special wooden corridor outside the house and under the eaves, which is usually the junction where sunlight enters the room. In the design, this interesting feature was placed in the verandah of the private compartment area. The combination of traditional and exquisite bamboo weaving form and modern lighting technology simulates the relationship between light and houses in traditional buildings, and at the same time satisfies the blurring of the boundaries between interior and exterior space design. Whenever you enter and exit the private room, you can experience the diversified changes of the spatial level.




在公共就餐区与私密包间区域的空间转换上,设计师通过置入艺术装置的方式,将偏于一隅的私密包间区与公共空间做了艺术性的转换处理。
In the space conversion between the public dining area and the private room area, the designer uses an artistic installation to make an artistic conversion process between the private room area and the public space that are biased towards one corner.


灵感来自两位当下很具影响力的东方艺术家——徐道获与塩田千春,他们都具有相似的艺术表达,均是通过棉线与织物创作,采用精美的单一色调表达诗意冥想。艺术装置带来沉浸式体验的同时也引发思考。
Inspired by two very influential oriental artists at the moment, Xu Daohuo and Shioda Chiharu, they both have similar artistic expressions. They both use cotton threads and fabrics to create poetic meditations in exquisite single tones. Art installations bring immersive experience and at the same time trigger thinking.

借鉴相同的灵感表达方式,将思绪、灵感亦或是抽象无形的精神状态,转变成一种可见不可言的情感语言。身处红色圆环空间的包围下,我们缓步感受着若隐若显的情绪起伏,达到空间与人的情感互动。
Learn from the same way of expressing inspiration, and transform your thoughts, inspirations, or abstract and intangible mental states into an emotional language that is visible and unspeakable. Surrounded by the red circle space, we slowly feel the vague emotional ups and downs, and reach the emotional interaction between space and people.

和伞
And umbrella
起初的唐伞由遣唐使从长安带到日本,经制伞匠人之手演化成和伞。精致的和伞制作流程同日本料理一样,在满怀着执念的职人手作中不断革新延续着。精妙的伞间竹骨以同一圆心的方式环绕排列,视觉上带有一种向心力,后来又在情感层面上发展出同心同德的美誉。
The original Tang Umbrella was brought to Japan by an envoy from Chang'an to Japan and evolved into a Japanese Umbrella by the hands of Umbrella Craftsmen. The exquisite Umbrella production process is the same as that of Japanese cuisine, and continues to innovate in the craftsmanship full of obsessions. The delicate bamboo bones between the umbrellas are arranged around the same center, visually with a kind of centripetal force, and later developed the reputation of being concentric on the emotional level.
基于这种因结构形式而生成的象征性,在包间设计上仿照和伞,将伞的结构形式固定在空间中形成亭。伞亭的设计带有一份可以遮风挡雨般的安定与舒适,也是将差异化的就餐体验融入其中。设计师还为包间定制了精美的艺术家画屏《银叶盛月华》,春夏秋冬、四季轮转、四时赏味、起承转合,意义在于把一件事做得完美和极致,独特的韵味与魅力,言之有物、拙朴天成,细微之处见风雅。
Based on the symbolism generated by the structural form, the design of the private room imitates the umbrella, and the structure of the umbrella is fixed in the space to form a pavilion. The design of the umbrella pavilion has the stability and comfort that can shelter from the wind and rain, and it also integrates a differentiated dining experience into it. The designer also customized an exquisite artist's painting screen "Silver Leaf and Moonlight" for the private room, which includes spring, summer, autumn and winter, four seasons, four seasons of appreciation, and succession. The meaning is to make one thing perfect and extreme, with a unique charm and charm. There are things, simple and natural, and elegant in the subtleties.

细工
Fine work
同蟹道品牌所追求的精致料理一致,在空间的细微之处将艺术品及日本匠人的手工艺融汇其中。在室内木造垂木椽架下,设计师将来自富士山下御殿场的木工世家胜间田茂之(Sikedaiku)亲手雕刻的楠木栏间镶嵌其中。施工中将每一块铜质瓦片用纯手工的方式安装于屋顶,工序虽繁更以心相照。
Consistent with the exquisite cuisine pursued by the Crabido brand, the art and craftsmanship of Japanese craftsmen are integrated in the subtleties of the space. Under the indoor wooden weeping wooden rafters, the designer inlaid the nanmu fences hand-carved by Sikedaiku, a carpenter family from Gotemba at the foot of Mount Fuji. During the construction, each piece of copper tile was installed on the roof by hand. Although the process is complicated, it is more heart-to-heart.


艺术隔扇之间,镶嵌着在日本木材拍卖会拍得的屋久杉,这是丰臣秀吉时代,为修建大阪城时所砍伐的屋久杉木,这种木材的高耐腐性,让它得以在砍伐下几百年后的今天依然没有腐烂。
Between the artistic partitions, there are inlaid Yaku cedar that was sold at the Japanese wood auction. This is the Yaku cedar that was felled for the construction of Osaka Castle during the Toyotomi Hideyoshi era. The high corrosion resistance of this wood allows it to be felled. Today, hundreds of years later, there is still no decay.


在花窗与隔间的细节处,选用最能代表日本木工细节技艺的(组子)细工排列其中,它几乎是用一种悄无声息的方式在绽放着精致工艺。
In the details of the flower windows and compartments, the fine work (group) that best represents the Japanese woodworking detail skills is selected, and it is almost in a quiet way that blooms with exquisite craftsmanship.


细节上的巧思,不仅仅是作为空间中被欣赏的物体。如同匠心料理一样所凝结成的感官之旅,本应是退去繁缛,提升生活品质的初心。
The ingenuity in the details is not just as an object to be admired in the space. The sensory journey condensed like ingenious cooking should be the original intention to retreat from the complicated and improve the quality of life.
